Accounting for Product Substitution in the Analysis of Food Taxes Targeting Obesity AgEcon

We extend the existing literature on food taxes targeting obesity. First, we incorporate the implicit substitution between sugar and fat nutrients implied by a complete food demand system and by conditioning on how food taxes affect total calorie intake. Second, we propose a methodology that accounts for the ability of consumers to substitute leaner low-fat and low-sugar items for rich food items within the same food group. This substitution is integrated into a demand system in addition to substitution among food groups. Simulations of a tax on added sugars show that the impact of the tax on consumption patterns is understated and the effect on welfare loss overstated when abstracting from this substitution within food groups.

Anchovies of the Sea of Azov and The Black Sea: Regularities of wintering migrations (Brief review) IBSS Repository

Close relation between internal (level of fat stores) and external (temperature fall) impulses of wintering migration of Azov and Black Sea anchovies Engraulis encrasicolus maeoticus and E. e. ponticus (“dosage principle”) was revealed. Schools with high fatness begin migration at more high temperature than that ones with low fatness. Intensity of migration also correlates with level of fatness. Regularities obtained may be used for study of wintering migration of other truly marine fishes.

Assessment of physical and physicochemical quality of main chocolates traded in Peru Acta Agron. (Palmira)

Abstract: The quality of the main chocolates marketed in Peru was determined. The physical aspect: color (C *, H *, IB), hardness and particle size, as well as physicochemical: water activity (aw), moisture, fat and ash, correlating with the declaration of ingredients presented in the packaging. We evaluated 30 experimental units of chocolates (imported, domestic, dark chocolate and milk) by experimental methods, randomly acquired from different establishments. The difference between color and hardness by origin was attributed to the dairy component. Dark chocolate had lower values of color components (8.75 ± 0.94 C *, 7.60 ± 4.71 H * and 28.46 ± 0.86 IB) than milk constituents (15.04 ± 2.78 C, 34.59 ± 7.46 H * and 34.55 ± 2.87 IB) and in hardness values...

The content of insulin-like growth factor 1 (IGF-1) in bovine milk in México is unknown, and high levels could increase the health risk for adult people who ingest milk. The aim of this study was to determine the level of IGF-1 and its relationship with fat content using liquid chromatography with ion trap as a mass detector in milk marketed in Durango, México. During 18 months we analyzed, three times, six lots chosen randomly of whole, reduced-fat, and low-fat milk of three brands. Empty body and carcass chemical composition were determined in 67 Nellore bulls from Selection Nellore (NeS) and Control Nellore (NeC) herds of an animal breeding program for growth, slaughtered at 570 days of average age, after 100 days of feedlot. Selection Nellore animals had, respectively, 360 and 430 kg of initial and slaughter body weight, and NeC animals had 318 and 373 kg for the same traits. ABSTRACT The objective of this experimental study was to evaluate the effects of different dietary energy sources on the carcass and meat traits of feedlot Nellore bulls. A total of 48 Nellore bulls at 32 months of age with 354.35±19.56 kg body weight were studied for 85 days. The bulls were allotted to four groups of 12 individuals: Whole corn grain - diet based on whole corn grain; Ground corn - diet based on ground corn grain; Citrus pulp - diet based on citrus pulp; and Steam-flaked corn - diet based on steam-flaked corn. The purpose of this study was to determine how feeding sheep coffee pulp affects carcass characteristics and what changes occur in physicochemical, antioxidant capacity and oxidation of the meat during refrigerated storage. The experiment was carried out in 15 Blackbelly lambs weighing an average 22.86±0.76kg. The animals were assigned to three treatments: T0=control diet, T1=diet with 8% coffee pulp, and T2=diet with 16% coffee pulp. After fattening for 56 days, the sheep were slaughtered and the carcasses assessed. The inclusion of 16% coffee pulp in the diet increased carcass dressing from 48.19 to 50.83% and decreased the amount of fat in rumen and intestines from 3.43 to 2.53% (P<0.05). The objective of this experiment was to evaluate the physical carcass composition and meat quality characteristics of Holstein calves in feedlot or pasture with supplementation, slaughtered at 140, 180, 220 or 260 kg body weight. Carcass traits of twenty Texel x Ile de France crossbred lambs slaughtered after weaning (52 days of age), or at 25, 30 and 35kg live weight were evaluated. Lambs were placed in individual stalls (1.5m²) and fed ad libitum with a diet composed of sorghum silage (Sorghum bicolor (L.) Moench) and a concentrate mix (ground corn, soybean meal, calcium carbonate and salt). Commercial dressing percentage was related quadratically with slaughter weight, being highest in lambs slaughtered after weaning. Real dressing percentage increased linearly. Abstract This research was carried out to evaluate centesimal [dry matter (DM), ash, and crude contents of proteins (CP), fats (CFt) and fiber (CFb)] and mineral composition (Ca, Mg, N, P, K, Fe, Zn, Cu and Mn) of peel and flesh tissues of feijoa fruit (cultivars Alcântara, Mattos, Helena and Nonante, and accession 2316). The genotypes had, in the flesh, DM of 12.10-15.40%, ash of 0.33-0.40%, CP of 0.95-1.45%, CFt of 0.56-1.72%, and CFb of 1.39-2.43%, and in the peel DM of 12.8-17.27%, ash of 0.30-1.49%, CP of 0.56-0.88%, CFt of 0.57-0.90%, and CFb of 2.54-3.98%. Composition of milk and mammary gland health in Criollo breed mares during lactation Arq. Bras. Med. Vet. Zootec.

ABSTRACT The aim of this study was to evaluate the components of milk and mammary gland health of Criollo mares. A total of 12 mares coming from a farm in southern Brazil were used. Samples of milk were taken from each mare every two weeks up to 180 days of lactation. The characteristics analyzed were fat, protein, lactose, total solids, somatic cell count (SCC) and total bacterial count (TBC). In relation to the health of the udder and the milk of the mares, the SCC was 24.1 x 103cells / ml and TBC was 44 x 103CFU / ml, while the average of milk components was 0.57% fat, 1.95% protein, 6.71% lactose and 9.24% total solids. The objective of the present work was to quantify the constitution and composition chemistry of the precooked goat buchada produced in the state of Paraíba, Brazil. The goat buchada presented considerable yield in relation to the live weight. High protein content was observed in the products analyzed. The lipid content presented high variation as result of the lack of standardization of products produced in the state and no control on parameters such as age, weight and breed of the slaughtered animals was observed. Scientists and beef industry participants are investigating ways to improve the healthiness of beef. We report results of a nationwide mail survey developed to determine consumers’ preferences for fat content in ground beef and identify how consumers would most like to improve the healthiness of beef. The results from a choice-based conjoint experiment indicate that consumers place significant value on reducing saturated fat and the Omega 6:3 ratio in ground beef, but were relatively unconcerned about conjugated linoleic acid.
